Golden, crispy Parmesan-panko chicken with a tender center and a squeeze of fresh lemon. A restaurant-worthy classic that keeps the cooking simple and the crunch front and center.
Put the chicken breasts between sheets of plastic wrap or parchment and pound them to about ¼-inch thick. Season both sides with kosher salt and black pepper.
Set out three shallow dishes: flour in the first, beaten eggs in the second, and panko, grated Parmesan and chopped parsley in the third. Flour → Egg → Breadcrumbs. That’s the order. Every time.
Coat each piece lightly in flour and shake off the excess. Dip it in the egg, then press it firmly into the panko mixture so the coating sticks. One hand for wet and one for dry—or you’ll bread your fingers too.
Pour enough neutral oil into a large skillet to reach about ⅛ inch deep. Heat over medium-high. Drop in a panko crumb: if it sizzles immediately, you’re ready. If it just sits there looking confused, give the oil another minute.
Add the chicken and cook about 2–3 minutes per side until deeply golden and the center reaches 165°F. Move it to a wire rack or paper-towel-lined plate and hit it with a small pinch of salt while hot.
Transfer the crispy chicken to warm plates and serve immediately with fresh lemon wedges. Keep the golden crust uncovered so it stays crunchy.
