WHAT YOU’RE MAKING

Crispy Chicken
Milanese
Lemon-Parmesan
Arugula
Burst Cherry Tomatoes
with Garlic & Basil

THE DRINKS

Limoncello Spritz

PER PERSON
2 oz limoncello
3 oz Prosecco
1 oz club soda
Ice
Lemon wheel
Fill a large wine glass with ice. Add the limoncello, then Prosecco and club soda. Give it one gentle stir and finish with a lemon wheel.
Learning Point — Why the Spritz Works Fried chicken loves something cold, bright and acidic. The lemon and bubbles cut through the richness of the crispy Milanese and reset your palate for the next bite.

S&S Move: Rich food? Bright drink. Steal that trick for damn near anything fried.

WHAT YOU NEED

Crispy Chicken Milanese

  • 2 boneless skinless chicken breasts, 6–8 oz each
  • ¾ tsp kosher salt, divided
  • ¼ tsp black pepper
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ½ cup finely grated Parmesan
  • 2 Tbsp finely chopped fresh parsley
  • About ½ cup neutral oil for frying
  • 1 lemon, cut into wedges
Secret Weapon — Panko
Bigger, flakier crumbs mean a lighter, crunchier crust. This is not the night to replace them with the dusty breadcrumbs hiding in the back of the cabinet.

Lemon-Parmesan Arugula

  • 3 cups arugula
  • 1½ Tbsp fresh lemon juice
  • 2 Tbsp extra-virgin olive oil
  • Pinch kosher salt
  • Black pepper
  • ¼ cup shaved Parmesan

Burst Cherry Tomatoes

  • 1½ cups cherry tomatoes
  • 1 Tbsp extra-virgin olive oil
  • 1 garlic clove, thinly sliced
  • Pinch kosher salt
  • Black pepper
  • 2 Tbsp torn fresh basil

Gear

  • Large skillet
  • Meat mallet or heavy-bottomed pan
  • 3 shallow bowls or plates
  • Tongs
  • Instant-read thermometer
  • Cutting board
  • Chef’s knife
  • Large bowl for the arugula
  • Wire rack or paper-towel-lined plate

BEFORE SHE GETS THERE

  • Prep the chicken. Pound the breasts to about ¼-inch thick, season both sides with salt and pepper, cover and refrigerate.
  • Set up the breading station. Flour → beaten eggs → panko, Parmesan & parsley. Keep the egg refrigerated until you’re ready to bread. Do not bread the chicken hours ahead. Crispy is the whole damn point.
  • Prep the sides. Wash and completely dry the arugula. Shave the Parmesan. Measure the dressing, but do not dress the arugula yet. Wash the tomatoes, slice the garlic and cut the lemon wedges.
  • Get the drinks cold. Chill the limoncello and Prosecco. If you’re going with the wine backup, get the Pinot Grigio cold too.
  • Clean the evidence. Cutting board away, counters wiped, sink empty.
  • Clean yourself up. Shower, clean shirt, brush your teeth. Cologne is not a marinade.
  • Set the room. Music on, lights down, couch straightened.
  • Hit the bathroom. Give it a quick wipe-down and, for God’s sake, man, make sure there’s toilet paper.
Food ready.
Place ready.
You’re ready. It’s game time.

PLAY BY PLAY

  1. START THE TOMATOES
Heat 1 Tbsp extra-virgin olive oil in a skillet over medium heat. Add 1½ cups cherry tomatoes with a pinch kosher salt and black pepper. Cook 5–7 minutes until they're blistered and starting to burst. Add 1 thinly sliced garlic clove for the final minute. Take them off the heat. Basil comes later. Those little tomatoes have done their job—no need to interrogate them.
  2. BREAD THE CHICKEN
Put ½ cup all-purpose flour in the first dish, 2 large beaten eggs in the second, and 1 cup panko breadcrumbs, ½ cup finely grated Parmesan and 2 Tbsp finely chopped fresh parsley in the third. Coat each piece of the 2 boneless skinless chicken breasts, 6–8 oz each in flour, then egg, then press it firmly into the panko mixture. Give that coating a little love. A lazy pat now means a naked chicken breast later.
LEARNING MOMENT — THREE-STAGE BREADING Flour → Egg → Breadcrumbs. That's the order. Every time. Skip one and the crust won't stick—this is not the place to freestyle.

S&S Move: One hand for wet and one for dry—or you'll bread your fingers too.
  1. HEAT THE OIL
Pour about ½ cup neutral oil for frying into a large skillet to come about ⅛-inch up the side. Heat over medium-high. Drop in one little panko crumb. If it sizzles immediately, you're ready. If it just sits there looking confused, give the oil another minute. We want a sizzle, not a sad little oil bath.
LEARNING MOMENT — HOT OIL = CRISPY CHICKEN If the oil isn't hot enough, the breading absorbs oil instead of crisping. You want an immediate, steady sizzle when the chicken hits the pan.

S&S Move: No sizzle? Pull back. Give the oil another minute. Greasy chicken is a shitty reward for doing everything else right.
  1. FRY THE CHICKEN
Carefully lay the 2 breaded chicken breasts into the hot oil. Cook about 2–3 minutes on the first side until deeply golden. Flip and cook another 2–3 minutes. Check the thickest part with your thermometer—you want 165°F.
    YO DUDE!
You're looking for deep golden brown and crispy on the first side before you flip. Not pale. Not burnt. Golden. If the crust looks right, flip it and start checking the temp. One confident flip, chef. No nervous poking every 12 seconds.
    S&S SAVE
Breading getting dark before the chicken hits 165°F? Drop the heat to medium and give it another minute or two. If needed, move the chicken to a 350°F oven to finish cooking without torching the crust.
  2. LET IT REST
Move the chicken to a wire rack or paper-towel-lined plate and hit it immediately with the remaining ¼ tsp kosher salt. Don't stack the pieces. Steam is the enemy of crunch. You worked for that crust—don't steam it into surrender.
  3. FINISH THE TOMATOES
Tear 2 Tbsp fresh basil and stir it into the warm tomatoes. Taste. Add another pinch kosher salt or black pepper if it needs it. Then quit messing with them. They're tomatoes, not a group project.
  4. DRESS THE ARUGULA
Toss 3 cups arugula with 1½ Tbsp fresh lemon juice, 2 Tbsp extra-virgin olive oil, a pinch kosher salt and black pepper. Add ¼ cup shaved Parmesan. Do this right before serving. Arugula waits for nobody. Dress it early and you'll be serving a sad green napkin.
  5. PLATE IT
Chicken first. Arugula beside it—not on top of that crispy crust. Tomatoes on the other side with a little garlicky juice. Add a wedge from 1 lemon, cut into wedges. Wipe the rim and serve it hot. That little plate wipe is the difference between 'I made dinner' and 'oh, you MADE dinner.'

THE TIMELINE

6:15
Pound + season. Get both chicken breasts to about ¼-inch thick. Season both sides with ½ tsp kosher salt and ¼ tsp black pepper.
6:25
Set the station. Flour, eggs and the panko-Parmesan mixture. Prep the tomatoes, garlic, basil, lemon and Parmesan.
6:35
Arugula prep. Wash it. Dry it completely. Measure the dressing—but don't toss it yet.
6:40
Get yourself ready. Shower. Clean shirt. Kitchen's under control. Now make sure you are too.
6:55
Final reset. Table ready. Drinks cold. Music on. Overhead lights off.
7:00
She's here. Door. Smile. Date. The chicken can wait five minutes.
7:05
Make the Limoncello Spritzes. Hand her a drink and have one with her. Stop acting like you're on a cooking show and enjoy the drink.
7:15
Tomatoes on. Let them blister and burst. Garlic goes in for the final minute.
7:22
Tomatoes off. Bread the chicken. Flour → egg → panko. Press that coating on.
7:27
Heat the oil. About ⅛-inch deep. Use the panko crumb test.
7:30
Chicken in. Fry until golden, about 2–3 minutes per side.
7:36
Chicken out. Check for 165°F. Rack it and give it a pinch of salt.
7:37
Finish the sides. Basil into the tomatoes. Toss the arugula with dressing and Parmesan.
7:40
Plate it. Chicken, arugula, tomatoes, lemon. Keep the wet stuff off the crispy chicken.
7:42
Dinner. Food hot. Drinks poured. Phone away.

★ BONUS POINTS

  • CHILL THE SPRITZ GLASSES.
Put two wine glasses in the freezer for about 10 minutes. Tiny move. Cold glass. Better drink. Easy points.
  • WARM THE DINNER PLATES.
Put them in a low oven for a few minutes before plating. Warm plates—not molten plates. We're serving dinner, not removing fingerprints.
  • KILL THE OVERHEAD LIGHTS.
Lamp. Candles. Music. You just fried Chicken Milanese. Don't serve it under lighting that makes your kitchen look like a pharmacy.
  • HAVE THE FIRST DRINK WITH HER.
Make the Limoncello Spritzes and get away from the stove for a few minutes. She came over to spend time with you. The chicken can survive five minutes without emotional support.
  • THE LEMON FINISH.
Put a couple of fresh lemon wedges on a small plate at the table. Let her add that final squeeze herself. A little fresh lemon wakes up the crispy chicken. Tiny detail, restaurant-level payoff. And you didn't have to learn French.

★ THE FINISH

Stop cooking. Start the date.
  1. Clear the dinner plates. Get the food out of the way. The kitchen can wait.
  2. Refresh the drinks. Another spritz, a glass of wine, or whatever you two are feeling.
  3. Change the scenery. Couch. Patio. Fireplace. Somewhere that doesn't feel like you're still at dinner.
  4. Put the phone away. You already got the food picture. The rest of the night doesn't need an audience.
  5. YOU'RE DONE PERFORMING. The food got you here. What happens next is the whole damn point.

Good food leads to amazing nights.
THE S&S PHOTO RULE Looks like the picture?
No? Perfect…
Perfect plating is overrated. Good food, cold drinks, great company. Famous words from Anthony Bourdain. Our pictures are for inspiration--not intimidation. Honest effort, amazing food and the night is young.
