WHAT YOU’RE MAKING

Garlic Butter
Shrimp Scampi
Lemon & White Wine
Angel Hair

THE DRINKS

Lemon Basil Martini

PER PERSON
2 oz vodka
¾ oz fresh lemon juice
½ oz simple syrup
2–3 fresh basil leaves
Ice
Shake hard with ice. Strain into a chilled martini glass. Garnish with basil and a lemon twist.
Learning Point — Shake It Hard A martini like this should be ice-cold. Give it a hard shake until the shaker feels damn near frozen, then strain it right away.

WHAT YOU NEED

Garlic Butter Shrimp Scampi

  • 1 lb large shrimp, peeled and deveined
  • 3 Tbsp extra-virgin olive oil
  • 4 Tbsp unsalted butter
  • 4 cloves garlic, finely chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup dry white wine
  • Juice of 1 whole lemon
  • ¼ tsp red pepper flakes — optional
  • ¼ cup fresh parsley, chopped
  • 1 Tbsp + 1 tsp kosher salt total
  • ½ tsp freshly ground black pepper total

Lemon & White Wine Angel Hair

  • 1 lb angel hair pasta
  • ½ cup reserved pasta water
  • Scampi sauce from the skillet
  • Fresh parsley for the finish

Lemon Basil Martini

  • Vodka
  • Fresh lemons
  • Simple syrup
  • Fresh basil
  • Ice
  • Lemon twist for garnish

Gear

  • Large pot
  • Large skillet
  • Colander
  • Tongs
  • Cutting board
  • Sharp knife
  • Measuring cups & spoons
  • Large spoon or pasta tongs
  • Cocktail shaker + strainer

BEFORE SHE GETS THERE

  • Chop the garlic and parsley. Halve the cherry tomatoes. Get all the knife work handled now.
  • Measure the white wine and lemon juice. Cut the butter into tablespoons and have it ready by the stove.
  • Peel and devein the shrimp if needed. Keep them refrigerated until you’re ready to cook.
  • Get the pasta pot, skillet, colander and tongs where you can reach them. This one moves fast once the shrimp hits the pan.
  • Get the martini stuff together: vodka, lemons, simple syrup, basil and ice. Chill two martini glasses if you’ve got room.
  • Set the table. Kill the overhead lights. Music on. Date-night rules apply.
  • DON’T FORGET THE BATHROOM. Give the sink, mirror, and toilet a wipe. And for God’s sake, man, make sure there’s toilet paper!
  • Clean as you go. Once she walks in, the tedious shit should already be handled.
Garlic is chopped.
Drinks are ready.
Now stop screwing around.

PLAY BY PLAY

  1. LOCK & LOAD.
Chop the garlic and parsley. Halve the tomatoes. Measure the wine and lemon juice. Have the butter ready. This one moves fast once you start.
  2. GET THE WATER ROLLING.
Bring a large pot of water to a boil and add 1 Tbsp kosher salt. Don’t drop the angel hair yet. It cooks fast, so save it for near the end.
  3. SHRIMP, MEET HOT PAN.
Pat the shrimp dry and season with ½ tsp kosher salt and ¼ tsp black pepper. Heat 1 Tbsp olive oil + 1 Tbsp butter in a large skillet over medium-high heat. Cook the shrimp 60–90 seconds per side, until pink and nearly cooked through. Move them to a plate.
    YO DUDE!
You're looking for the shrimp to turn pink, opaque, and curl into a loose C. If they're still gray in the center, they're not ready. Don't cook them into little rubber tires.
  4. BUILD THE GOOD STUFF.
Lower the heat to medium. Add the remaining 2 Tbsp olive oil, garlic, cherry tomatoes, and red pepper flakes if using. Cook 30–60 seconds, just until the garlic smells great. Don’t burn the garlic.
  5. WINE TIME.
Pour in ½ cup dry white wine and let it bubble 2–3 minutes to reduce. Add the juice of 1 lemon. Turn the heat to low and swirl in the remaining 3 Tbsp butter, one tablespoon at a time, until the sauce is smooth and glossy.
LEARNING MOMENT — REDUCE “Reduce” just means letting the liquid boil uncovered so some of it cooks away. Less liquid means stronger flavor and a slightly thicker sauce. No lid. Just let it bubble.
  1. DROP THE ANGEL HAIR.
Put 1 lb angel hair into the boiling water and cook 3–4 minutes, or until al dente. Before draining, save about ½ cup pasta water.
LEARNING MOMENT — AL DENTE Italian for “to the tooth.” The pasta should be tender but still have a little bite—not soft and mushy. Pull out a strand and bite it. Slightly under is better than over because it’s going into the hot sauce next.
  1. NOW TASTE YOUR SAUCE.
Taste it before the pasta and shrimp go back in. If it needs salt, add it ¼ teaspoon at a time. If it needs pepper, give it a few fresh cracks. If you used red pepper flakes, check the heat too. We’re trying to impress her, not burn her damn mouth off.
  2. BRING IT HOME.
Add the drained angel hair and shrimp back to the skillet. Toss everything together and simmer for about 2 minutes. Add a splash of reserved pasta water if the sauce needs loosening. Finish with chopped parsley.
    S&S SAVE
Sauce looking too thin after the pasta goes in? Keep tossing over low heat for another 30–60 seconds. Still loose? Add a small splash of pasta water and keep tossing. You're looking for sauce that clings to the pasta — not a puddle at the bottom of the bowl.

★ BONUS POINTS

  • Chill the martini glasses before she gets there.
  • Put a bottle of sparkling water on the table with a couple lemon slices.
  • Pick up a good loaf of crusty bread. That scampi sauce should not be left behind.
  • Fresh flowers. Nothing elaborate—grocery-store flowers still count.
  • Put on an Italian dinner playlist and keep it low enough that you can actually talk.
  • Dessert cheat code: grab two good cannoli from an Italian bakery. You cooked dinner. Nobody said you had to make fucking dessert.

★ THE FINISH

  1. Angel hair first. Give it a loose twist in the center of each bowl.
  2. Shrimp gets the spotlight. Put the shrimp on top instead of burying them underneath the pasta.
  3. Finish with the sauce. Spoon the garlic, tomatoes and glossy butter sauce over the top.
  4. Fresh parsley. Clean rim. Thirty seconds. Makes the whole damn plate look intentional.
  5. You’re done performing. Dinner’s hot. The drinks are poured. The kitchen can wait. Move your ass away from the stove and go enjoy the reason you cooked all this in the first place. Good food leads to amazing nights.
THE S&S PHOTO RULE Looks like the picture?
No? Perfect!
No Michelin inspector is hiding behind your curtains. If she’s smiling, pour the drinks and serve the damn food.
