Jerk Shrimp Wraps
with Mango Slaw
& Coconut-Lime Rice

Jerk shrimp, cool mango slaw, crisp butter lettuce, and just enough heat to make things interesting.

Do the chopping before she gets there and dinner becomes stupid simple. When you're ready to eat, the shrimp hit a hot skillet for five minutes, everything gets piled into lettuce wraps, and you're done.

Fresh, colorful, a little messy, and definitely not boring.

Things might get a little messy. Good!

WHAT YOU NEED

Jerk Shrimp Wraps & Mango Slaw
  • 1 lb large shrimp, peeled and deveined, tails removed
  • 2 Tbsp Jamaican jerk seasoning
  • 1 Tbsp fresh lime juice
  • 2 tsp vinegar — red wine, white, or apple cider
  • 1 tsp sugar
  • 1/4 tsp kosher salt
  • Pinch of black pepper
  • 1 small ripe mango, peeled and diced

  • 1/4 small red onion, finely chopped
  • 1/2 cup shredded cabbage
  • 2 Tbsp olive oil
  • 8 butter lettuce leaves

No good mangoes? Use 1 cup canned pineapple, drained and diced. Nobody needs to gamble dinner on a rock-hard grocery-store mango.

  • 1/2 tsp kosher salt

BEFORE SHE
GETS THERE

🔪
Get Ready
  • Wash and dry the butter lettuce leaves.
  • Chop the cilantro.
  • Pat the shrimp dry and keep them refrigerated.
  • Don't season them yet.
  • Measure everything for the Coconut-Lime Rice.
🥣
Make the Slaw Dressing

In a bowl, add:

  • 1 Tbsp lime juice
  • 2 tsp vinegar
  • 1 tsp sugar
  • 1/4 tsp kosher salt
  • Pinch of black pepper
Whisk until combined. Cover and put it in the fridge.
🥭
Prep the Slaw

In a separate bowl, add:

  • Diced mango
  • Water chestnuts
  • Finely chopped red onion
  • 1/2 cup shredded cabbage
Cover and put it in the fridge.
❄️
Keep It Separate

Keep the dressing and slaw separate.

We want cold and crunchy—not something that's been marinating itself into submission for an hour.

  • Put out two plates.
  • Put out napkins.
  • Get whatever you're drinking ready.

PLAY BY PLAY

Coconut-Lime Rice
  1. Rinse 1 cup jasmine rice under cold water until the water runs mostly clear.
  2. Add rice, 3/4 cup coconut milk, 3/4 cup water, and 1/2 teaspoon kosher salt to a saucepan.
  3. Bring to a gentle boil.
  4. Cover and reduce the heat to low. Cook for 15 minutes.
  5. Turn off the heat and let the rice sit, covered, for another 10 minutes.
  6. Fluff with a fork.
  7. Stir in 2 tablespoons fresh lime juice and chopped cilantro.
  8. Cover and keep warm until dinner.
Leave the damn lid on while it rests. Curiosity has ruined more rice than bad cooking.
Mango Slaw
  1. Take the slaw and dressing out of the refrigerator shortly before cooking the shrimp.
  2. Pour the dressing over the mango mixture.
  3. Toss until everything is lightly coated.
  4. Put it back in the refrigerator while you cook the shrimp.
Cold slaw. Hot shrimp. That's the move.
Jerk Shrimp
  1. Toss the shrimp with 2 tablespoons Jamaican jerk seasoning.
  2. Heat a cast-iron or heavy skillet over medium-high heat.
  3. Add 2 tablespoons olive oil and let it heat for about 30 seconds.
  4. Add the shrimp in a single layer.
  5. Cook for 4–5 minutes total, turning once, until browned outside and opaque throughout.
  6. Remove the shrimp from the heat.
Hot pan. Single layer. We're searing shrimp, not steaming a seafood pile.

Five minutes. Shrimp go from perfect to pencil erasers surprisingly fast.
Build the Wraps
  1. Lay out the butter lettuce leaves.
  2. Add a few jerk shrimp to each leaf.
  3. Spoon the cold mango slaw over the shrimp.
  4. Finish with fresh cilantro.
Don't stuff them like a burrito. She should be able to eat the damn thing.
Serve with Coconut-Lime Rice on the side.

DRINKS

🍷
WINE
Cold Sauvignon Blanc.

The acidity works with the lime and mango, and the crispness handles the jerk heat. You don't need to know why. It works.

🍺
BEER
Mexican lager or another light, crisp lager.

Throw a lime in it and move on with your evening.

🥃
COCKTAIL
Rum and soda with lime.

Three ingredients. Tropical enough for the meal without creating another recipe.

BONUS POINTS

  • Put extra slaw in a small serving bowl.
  • Cut lime into wedges and put a couple on each plate.
  • Don't build every wrap ahead of time.
  • Let her build round two.
Fresh, hands-on, and a little messy.
Use that information however you see fit.
