WHAT YOU’RE MAKING

Hot Honey
Chicken Thighs
Whipped
Sweet Potatoes
Charred Garlic
Green Beans

THE DRINKS

Bourbon Peach Smash

PER DRINK
2 oz bourbon
½ ripe peach, sliced
¾ oz fresh lemon juice
½ oz simple syrup
2–3 mint leaves
Ice
Splash of club soda
Gently muddle the peach and mint. Add bourbon, lemon juice, simple syrup and ice. Shake, strain over fresh ice and finish with a small splash of club soda.
Learning Point — Muddle, Don't Murder It You're pressing the peach enough to release the juice and lightly bruising the mint. You're making a cocktail, not interrogating the fruit.

Wine Backup: An off-dry Riesling. The slight sweetness handles the heat, while the acidity cuts through the richness.

WHAT YOU NEED

Hot Honey Chicken Thighs

  • 4 small bone-in, skin-on chicken thighs, about 1½–2 lb total
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 1 Tbsp neutral oil, only if needed
Southern Hot Honey Glaze
¼ cup honey
2 Tbsp unsalted butter
1 large garlic clove, finely minced
½ tsp cayenne
2 tsp apple cider vinegar
Pinch kosher salt

For the Spice Freaks: Add ¼–½ tsp red chili flakes. Start at ¼ tsp unless you're trying to make your date sweat for reasons unrelated to dinner.

Whipped Sweet Potatoes

  • 1 lb sweet potatoes, peeled and cut into chunks
  • 2 Tbsp unsalted butter
  • 2–3 Tbsp heavy cream, warmed
  • ½ tsp kosher salt
  • ⅛ tsp black pepper
The Move — Warm the Cream
Warm cream incorporates more smoothly and doesn't cool the potatoes down while you're whipping them.

Charred Garlic Green Beans

  • 8 oz fresh green beans, trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • ¼ tsp kosher salt
  • ⅛ tsp black pepper
  • ½ lemon
The Move — Garlic Goes In Last
Burnt garlic doesn't taste “extra garlicky.” It tastes burnt.

Gear

  • Cast-iron or heavy oven-safe skillet
  • Medium pot for the sweet potatoes
  • Skillet for the green beans
  • Instant-read thermometer
  • Potato masher
  • Tongs
  • Cutting board
  • Chef's knife
  • Measuring cups and spoons
  • Cocktail shaker
  • Muddler or wooden spoon

BEFORE SHE GETS THERE

  • Do the boring stuff beforehand. Trim the beans. Peel the potatoes. Measure the glaze ingredients. When she gets here, you should be pouring a drink — not mincing garlic.
  • Pat the chicken thighs dry and have the seasoning measured and ready. Keep the chicken refrigerated until it's time to cook.
  • Get the Bourbon Peach Smash ingredients together. Chill the club soda and have plenty of ice ready.
  • Take the trash out. Wipe down the bathroom. And for God’s sake, man, make sure there’s toilet paper.
  • Clear the kitchen counters and get the sink under control. We're going for “guy with a plan,” not “crime scene with cookware.”
  • Now get out of the kitchen. Shower. Lose the shirt you’ve been wearing since Tuesday.
  • Put some music on. Clean up the evidence.
Remember the mission.
Now you look like a guy
who had a plan all along.
hey

PLAY BY PLAY

  1. SWEET POTATOES FIRST
Boil 1 lb sweet potatoes, peeled and cut into chunks in water until fork-tender, about 15 minutes. Drain them, return them to the hot pot over low heat for about 60 seconds, then mash with 2 Tbsp unsalted butter and 2–3 Tbsp warmed heavy cream. Season with ½ tsp kosher salt and ⅛ tsp black pepper. Cover and keep warm.

One thing handled. Look at you being prepared.
  2. CRISPY CHICKEN TIME
Pat 4 small bone-in, skin-on chicken thighs, about 1½–2 lb total really dry and season with 1 tsp kosher salt, ½ tsp black pepper, ½ tsp smoked paprika and ½ tsp garlic powder. Put them skin-side down in a COLD cast-iron or heavy skillet. Turn the heat to medium and cook 10–12 minutes without screwing with them. When the skin is deep golden and crispy, flip and cook another 2–3 minutes.
LEARNING POINT — WHY START WITH A COLD SKILLET? Normally we tell you to get the pan hot first. Not this time.

Starting chicken thighs skin-side down in a cold cast-iron or heavy skillet lets the fat under the skin slowly render as the pan heats up. That rendered fat helps fry the skin until it's deep golden and crispy.

Start screaming hot and you can burn the skin before enough fat renders out.

Cold pan. Skin down. Medium heat. Leave it the hell alone.
  1. INTO THE OVEN
Move the skillet into a 400°F oven. Start checking the chicken after about 10 minutes. Use an instant-read thermometer in the thickest part, without touching the bone. You're aiming for about 175°F for tender dark meat. Pull it and let it rest.

Use the thermometer. Guessing is for carnival games.

    YO DUDE!
You're looking for the chicken to be deep golden outside and fully opaque at the thickest part. The thermometer gets the final say: 175°F for tender dark meat. Don't pull it just because the clock says 10 minutes.
    S&S SAVE
Skin getting too dark before the chicken reaches 175°F? Drop the oven to 350°F and keep cooking. Don't cover the chicken—you'll lose that crispy skin. Let it finish slower instead.
  2. CHAR THE BEANS
Get a skillet hot. Add 1 Tbsp olive oil and 8 oz trimmed fresh green beans and leave them alone for about 2 minutes so they blister. Toss and cook another 3–4 minutes. Add 1 minced garlic clove only for the final 30–45 seconds. Season with ¼ tsp kosher salt and ⅛ tsp black pepper, then finish with a small squeeze from ½ lemon.

THE MOVE: Garlic goes in last. Burnt garlic doesn't taste “extra garlicky.” It tastes burnt.
  3. MAKE THE HOT HONEY
Pour off most of the chicken fat, leaving about 1 teaspoon in the skillet. Turn the heat low. Add 1 large finely minced garlic clove for 20–30 seconds, then ¼ cup honey, ½ tsp cayenne, 2 tsp apple cider vinegar and a pinch kosher salt. Stir for about 30 seconds. Turn the heat OFF and swirl in 2 Tbsp unsalted butter until glossy.

FOR THE SPICE FREAKS: Add ¼–½ tsp red chili flakes. Start at ¼ tsp unless you're trying to make your date sweat for reasons unrelated to dinner.
LEARNING POINT — WHY THE VINEGAR? Hot honey needs more than sweet + heat. That little splash of apple cider vinegar cuts through the honey and butter and keeps the glaze from tasting like spicy pancake syrup.
  1. BRING IT HOME
Return the 4 chicken thighs skin-side up and spoon the hot honey over them.

Glaze it. Don't drown it. We worked too damn hard for that crispy skin.
  2. PLATE
Spoon the sweet potatoes onto the plate, then drag the back of the spoon through them once to make a wide streak. Set the chicken partly on top. Green beans alongside. Finish with a little extra hot honey around the chicken.

One clean drag — we're plating dinner, not starting an arts-and-crafts project.

You're done cooking. Go be on the date.

★ BONUS POINTS

  • WARM THE PLATES.
Put the dinner plates in the turned-off oven for a couple minutes after the chicken comes out. Warm plate = dinner stays hot longer. Tiny move. Weirdly impressive.
  • SAVE A LITTLE HOT HONEY.
Hold back a spoonful before glazing and put it in a small dish on the table for anyone who wants extra heat. You look prepared. She thinks you thought of everything. We'll take the credit.
  • LOSE THE OVERHEAD LIGHTS.
Lamp. Candles. Whatever you've got. Nobody has ever looked across the table under a 5,000-lumen kitchen light and thought, “Damn, this is romantic.”
  • KEEP THE HONEY WARM.
If the reserved hot honey thickens up before dinner, give it a few seconds over low heat before putting it on the table. Warm honey drizzles. Cold honey lands like roofing tar.
  • HIT THE SWEET POTATOES WITH FLAKY SALT.
Right before serving, add a tiny pinch over the top. Sweet, buttery potatoes plus a little salty crunch. Stupid-easy upgrade.

★ THE FINISH

Stop cooking. Start the date.
  1. Clear the dinner plates. Get the food out of the way. Put anything that needs refrigeration away. The rest can wait.
  2. Refresh the drinks. Another Bourbon Peach Smash, a glass of wine, or whatever you two are feeling.
  3. Kill the kitchen lights. Put the music back on. Dinner is over. The kitchen doesn't need an audience.
  4. Leave the damn dishes. The pans will still be there tomorrow. Your date is here right now.
  5. YOU'RE DONE PERFORMING. You made dinner to create the night. Now go enjoy it.

Good food leads to amazing nights.
