THE DRINKS

Strawberry Basil Smash

FOR TWO
4 oz vodka
6 fresh strawberries
6 fresh basil leaves
2 oz fresh lemon juice
1½ oz simple syrup
Ice
Optional strawberry garnish
Gently muddle the strawberries and basil with the lemon juice and simple syrup. Add vodka and ice, shake until cold, then strain over fresh ice in two rocks glasses. Garnish with a strawberry if you like.

WITH DINNER: Pour two chilled glasses of Pinot Grigio.
Learning Point — Easy on the Basil Basil releases its fragrant oils with a gentle muddle. Crush it too hard and you can bring out bitter flavors. A few light presses are plenty.

S&S Move: You're making a cocktail, not punishing a houseplant.

WHAT YOU NEED

Grilled Bruschetta Chicken

  • 2 boneless, skinless chicken breasts
  • 2 Tbsp olive oil (marinade)
  • 1 Tbsp fresh lemon juice
  • 2 garlic cloves, minced (marinade)
  • 1 tsp Italian seasoning
  • ½ tsp kosher salt (marinade)
  • ¼ tsp black pepper
  • 3 Roma tomatoes, diced
  • ¼ cup fresh basil, sliced
  • 2 more garlic cloves, minced
  • 1 Tbsp olive oil (topping)
  • ¼ tsp kosher salt (topping)
  • Shaved Parmesan, for finishing
  • Store-bought balsamic glaze, for drizzling
Secret Weapon — A Slotted Spoon
Let the tomato topping mingle for 20–30 minutes, then lift it onto the chicken with a slotted spoon. Big flavor, no soggy plate.

Classic Caesar Salad

  • 1 romaine heart
  • ¼ cup shaved Parmesan
  • ½ cup croutons
  • About 3 Tbsp bottled Caesar dressing

Grilled Balsamic Crostini

  • ½ French baguette
  • 2 Tbsp softened salted butter
  • Store-bought balsamic glaze (same bottle as chicken)

Gear

  • Outdoor grill
  • Meat mallet or heavy-bottomed pan
  • Mixing bowls
  • Cutting board and chef’s knife
  • Tongs
  • Instant-read meat thermometer
  • Slotted spoon
  • Cocktail shaker and muddler
  • Two rocks glasses and two wine glasses

BEFORE SHE GETS THERE

  • Marinate the chicken. Pound the breasts to about ¾-inch thick, coat in the lemon-garlic marinade, cover and refrigerate for 30 minutes.
  • Make the bruschetta topping. Dice the tomatoes, slice the basil and mix with garlic, olive oil and salt. Give it 20–30 minutes to come together.
  • Prep the sides. Wash and dry the romaine, set out Parmesan and croutons, and slice the baguette. Keep the Caesar dressing off until dinner.
  • Set up the drinks. Chill the vodka, have the strawberries and basil ready, and put the Pinot Grigio in the fridge.
  • Check the grill. Clean grates, enough fuel, thermometer handy. Discovering an empty propane tank mid-date is not a plot twist we need.
  • Clear the kitchen. Wash the cutting board, wipe the counters and get the dishes out of the sink.
  • Clean yourself up. Fresh shirt, brush your teeth, and give yourself enough time to look like you weren't just wrestling with a grill.
  • Set the scene. Music on, table set, lighting right. And yes, check the bathroom and toilet paper.
Grill ready.
Drinks chilled.
You’re ready. It’s game time.

PLAY BY PLAY

  1. GET THE CHICKEN READY
Place 2 boneless, skinless chicken breasts between sheets of plastic wrap and gently pound to about ¾ inch thick. Even thickness helps everything cook at the same rate.
  2. GIVE IT SOME ITALIAN ATTITUDE
Mix 2 Tbsp olive oil, 1 Tbsp fresh lemon juice, 2 minced garlic cloves, 1 tsp Italian seasoning, ½ tsp kosher salt and ¼ tsp black pepper. Coat the chicken, cover and refrigerate for 30 minutes.
  3. MAKE THE BRUSCHETTA MAGIC
Dice 3 Roma tomatoes and combine with ¼ cup sliced fresh basil, 2 minced garlic cloves, 1 Tbsp olive oil and ¼ tsp kosher salt. Stir gently and let sit 20–30 minutes so the flavors can get to know each other.
LEARNING MOMENT — GIVE THOSE TOMATOES SOME TIME Ever wonder why restaurant bruschetta tastes so good? It's not some secret Italian ingredient. It's time. Letting the tomatoes, basil, garlic and olive oil hang out together for 20–30 minutes lets the flavors blend and the tomatoes release their natural juices.

S&S Move: Use a slotted spoon when topping the chicken. All that fresh flavor, without turning beautifully grilled chicken into tomato soup.
  1. GET THE SUPPORTING CAST READY
Wash and chop 1 romaine heart. Set out ¼ cup shaved Parmesan, ½ cup croutons and about 3 Tbsp bottled Caesar dressing. Slice ½ French baguette and lightly butter both sides with 2 Tbsp softened salted butter. Leave the salad undressed until serving.
  2. FIRE UP THE GRILL
Preheat the outdoor grill to medium-high, about 400–425°F. Clean and lightly oil the grates. Remove the chicken from its marinade, letting excess drip away.
  3. GRILL LIKE YOU MEAN IT
Place chicken on the grill. Cook approximately 5–8 minutes per side, depending on thickness, closing the lid between flips. The thickest part must reach 165°F on a meat thermometer.
YO, DUDE! — PUT DOWN THE SPATULA
Those grill marks won't happen if you're constantly moving the chicken around. Put it on, close the lid and let it cook. And don't press down with the spatula—you'll squeeze out the juices that keep it tender. The grill's doing its job. Let it.
    S&S SAVE
Chicken browning too quickly before it reaches 165°F? Move it to a cooler part of the grill, close the lid and let it finish gently. Trust the thermometer, not the clock.
  4. LET THE CHICKEN REST
Transfer to a clean plate and rest 5 minutes. While it rests, grill the buttered baguette slices 1–2 minutes per side until golden and lightly crisp. Keep an eye on the bread—it goes from beautifully toasted to a small backyard emergency pretty quickly.
  5. FINISH THE BALSAMIC CROSTINI
Arrange the toasted baguette slices on a serving plate and add a light drizzle of store-bought balsamic glaze.
  6. BUILD THE CHICKEN MASTERPIECE
Place the chicken on serving plates. Using a slotted spoon, pile the tomato-basil bruschetta on top, leaving extra liquid behind. Finish with shaved Parmesan and a light balsamic glaze drizzle.
  7. BRING THE CAESAR TO THE PARTY
Just before serving, toss the romaine with Caesar dressing, shaved Parmesan and croutons. Keep it lightly coated and crisp.
  8. THE FINAL PLATE
Serve the chicken with Caesar salad and warm balsamic crostini. Pour two chilled glasses of Pinot Grigio and bring dinner to the table. S&S Move: You made a beautiful dinner. Own it.
