Golden salmon basted in nutty brown butter with a sweet-savory maple-miso glaze, crispy garlic smashed potatoes and roasted green beans. Big flavor without turning dinner into a cooking competition.
Slice the green onions. In a small bowl, stir together the miso, maple syrup and minced garlic until smooth. Set the glaze aside.
Pat the salmon dry. Season with a tiny pinch of salt and black pepper. Go easy on the salt — the miso already brings plenty.
Put 2 Tbsp butter in a large skillet over medium heat. Swirl for about 2–3 minutes until you see brown specks and it smells nutty. Turn the heat down to medium-low.
Put the salmon in flesh-side down. Cook about 3 minutes without moving it. When the surface is golden, flip it.
Spoon the miso-maple glaze over the cooked top of each fillet. Tilt the skillet so the brown butter collects on one side. Scoop it up with a large spoon and pour it over the salmon again and again for 3–4 minutes, until the salmon is glossy and cooked through.
Spoon the remaining caramelized miso-brown butter over the salmon, finish with plenty of sliced green onions, and serve hot.
